Tahoe recipe: Baked tortilla pie a simple dish with few ingredients

Make a tortilla pie for dinner this weekend.

SOUTH LAKE TAHOE, Calif. — You can’t go wrong with a baked tortilla pie. This dish will make just about anyone happy, plus it’s simple; and you most likely have a cupboard stocked with these ingredients already.

An added bonus, this dish will please those people who, like my boyfriend, make it a goal to prepare dinner using as few dishes as possible.

This recipe is great using canned goods, but if you do have the time to cook beans from scratch, make the pico de gallo and shuck fresh corn — it will really wow.



Get creative, add roasted bell peppers or any of your favorite taco fixins. This is a vegetarian version, but you could also add ground turkey or beef cooked in the taco seasoning.

Tortilla pie ingredients:



5 soft taco flour tortillas

1 can of black beans, rinsed

1 can of refried beans

1 can corn kernels, rinsed

1 cup pico de gallo

1/4 cup sliced olives

1/4 cup sliced jalapeños

2 cups shredded Mexican blend cheese

Taco seasoning* ingredients:

1 teaspoon cumin

1/2 teaspoon oregano

1/2 teaspoon paprika

1 teaspoon chili powder

1/2 teaspoon garlic powder

1 teaspoon salt

Directions:

Preheat the oven to 400 degrees and prep your fixins. Mix the taco seasoning into the refried beans and set aside.

Start the layering process by putting one tortilla into a springform pan or round baking dish. Spread one third of the refried beans onto the tortilla, then one third of the corn, one third of the black beans and a 1/4 cup of the cheese. Place another tortilla on top and press it down starting in the middle so the fixins spread around the tortilla.

Repeat the layering process two more times, this time adding two tablespoons of pico and a few jalapeños to each layer (make sure to reserve 1/4 cup of the pico de gallo for later). Top the final tortilla with the remaining cheese, pico de gallo, jalapeños, and black olives. Bake for 20-30 minutes. Slice into wedges and serve with a dollop of sour cream or plain Greek yogurt. Enjoy!

*If you don’t have these spices on hand, you can also purchase a taco seasoning packet.
