To try and decide each week where and what to eat around Truckee-Tahoe can be a challenge — there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.

It’s not every day that the weekly dish feature gets to go this big. This week we are not just featuring a single dish, but highlighting Mountain Lotus Provisions’ Meatless Monday, which includes a three-course vegan dinner from a weekly rotating region of focus around the Pacific Rim.

Before we dive into a recent sample menu, let’s set the table. Each Monday, a new menu consisting of three items is posted. From there, customers have until Thursday to place their order for the following week. Once that Monday rolls around, hop over to their parking lot between 5-7 p.m., pick up your order, then take to wherever and enjoy.

Now for the food. Since the current menu would be past the deadline when this publishes in print, we decided to touch on a recent menu offering (California-focused). Here is a typical offering that you can eat in any order than you wish:

  • Course one: Avocado toast. Now, this isn’t your traditional avocado toast. The “toast” in this offering is actually a hash brown patty. This gluten free offering consists of sliced organic avocado, pickled red onions (pickled in beet juice), arugula, toasted sesame seeds and pepitas, espelette, all topped with a paprika aioli. Yes, there’s a lot going on in these bites, but each bite is worth it.
  • Course two: Baby Kale Salad. In addition to the baby kale, this banger of a dish also includes roasted beets, a vegan “goat cheese,” candied pecans, garbanzo beans (marinated in lemon juice and zest along with salt and pepper), and topped with a green goddess dressing that includes garlic confit, green onion, mint, cilantro, and parsley. It may sound like a lot of ingredients, but everything works together in perfect harmony and really captures that California fresh vibe.
  • Course three: Roasted Corn Chowder. Corn isn’t the only thing getting roasted in this dish; red peppers are also getting their roast on, along with cauliflower before getting whizzed up and ladled into a five-inch Truckee Sourdough bread bowl then topped with fresh parsley.

For those of you looking to get a sneak peek at the upcoming menu, I have only one hint for you: Japan. I didn’t get a sneak preview of the menu, but what I do know is that whatever quintessential Japanese dishes you might be thinking of, they’re going to have a healthy vegan twist.
