Jerky Junction found its first retail outlet in Truckee. “It’s an interesting story,” said owner Andy Baird, who operates Jerky Junction with his son Kyle. “I’ve been doing jerky for 17 years, and always wanted to open a retail store. This just worked out perfectly. It’s a natural.”

Jerky Junction products are made from USA top round beef, with the Big Red Caboose line a tribute to Truckee and those who like a thicker cut of jerky.

“I was in the restaurant business for year,” said Baird. “I knew I wanted to work with food, and started Jerky Junction with the train logo. I’ve always liked trains.”

Trains aren’t just in the name: Baird’s grandfather Walter Baird invented the first electric light for trains. “People complained the flames burned out on the lights and it was dangerous,” explains Baird. “My grandfather invented the first light just when dry cell batteries were coming out.”

In addition to the bold Big Red Caboose line, Baird offers jerky lovers elk, venison, buffalo, ahi and salmon jerky. Baird even has Bow Wow jerky for canine companions. And meatless soy jerky in six flavors.
