Drunken Monkey announces new gluten free menu

TRUCKEE, Calif. and#8212; Drunken Monkey has just unveiled new allergen specific menus to add to their existing offering of fresh innovative cuisine.

In recent years there has been a drastic increase in the number of customers with wheat or wheat gluten allergies. Wheat allergies are most commonly associated with three classic allergy symptoms: Asthma, eczema (or atopic dermatitis), and, rarely, anaphylaxis.

Drunken Monkey has addressed this trend head on by creating menus that specifically address these allergies. After significant research and planning, Drunken Monkey prepared gluten, wheat, dairy and nut-free menus based on research of food allergies from multiple institutions, including the celiac society as well as customer recommendations and suggestions.

and#8220;The most difficult part was to educate all of the staff, especially kitchen staff, to eliminate cross contamination as well as wheat dust isolation,and#8221; said Sam Okamoto, Chef and Manager of Drunken Monkey. and#8220;All of the servers and managers are now trained with this subject to ensure they understand the food allergies and how to handle guests with these allergies. Drunken Monkey will continue to study allergies further and will participate in introducing and educating their clients with wheat-free products and preparations available in the Lake Tahoe area.
