EAT This Week: Café Lupine’s Thai Chicken Wrap
To try and decide each week where and what to eat in and around the basin can be a challenge – there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.
By the time you read this, I’m willing to bet that if you’re hungry and someone even whispers the word turkey, your stomach immediately swells up, and you might even be able to physically hear it sigh. While it may be great for Thanksgiving and a few days afterwards, right about now is the time you’re ready to break up and move on. Enter this week’s feature – a great way to pull a 180 and get out of the leftover doldrums.

As far as ingredients go, it’s pretty straightforward: tender chicken, crisp veggies (think shredded cabbage and carrots) and peanut sauce wrapped in a flour tortilla. But even with the minimal ingredients, this dish pulls out some huge flavors and textures.
The chicken is supremely moist and soaks in all the complexity of the peanut sauce. It’s equal parts nutty, sweet, savory, and tangy with the perfect hint of spice. Sometimes you can overdo the sauce when it comes to wraps to where it gets soggy and starts pouring out the seams. But here, it is the textbook example of having just enough to seep through all of the ingredients while not overdoing it – all while allowing the veggies to keep their texture giving each bite a delicate crunch.
Once the winter makes up its mind as to when to really kick in, this is a great option to grab and go before hitting the mountain. One of these at 8,000 feet on a bluebird day will make for a fantastic meal. Let’s just hope we can enjoy that scenario sooner than later … Are you listening Mother Nature?
