EAT This Week: Sage Leaf’s Braised Bacon Eggs Benedict
To try and decide each week where and what to eat in and around the basin can be a challenge – there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.
I love eggs benedict. It’s one of my favorite breakfast dishes. And not just the straight up normal version, I love the fact that you can create so many different iterations and still have it be an eggs benedict – much like this week’s feature. It has all the feels, but the slight tweaks here and there are enough to make it one of the better versions that I’ve had in a while.

Building from the ground floor is a pair of toasted English muffins, thick cut braised bacon, and two poached eggs doused in a house made chipotle hollandaise sauce. It’s served with a small house salad, which might seem a little unorthodox to have a salad with breakfast, but it’s actually a refreshing alternative to something like potatoes, which can sometimes leave you overstuffed.
Smokiness is doubled down in this dish, first from the bacon and then from the chipotle hollandaise. While chipotle can be a flavor that can get out of control in a hurry, it complements all the ingredients here perfectly while the creamy and tangy elements from the hollandaise help to cut through the richness of the bacon and egg yolk. But if I’m really playing favorites in this dish, it’s the bacon. It’s tender and juicy and everything you love about bacon times ten.
