To try and decide each week where and what to eat in and around the basin can be a challenge – there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.

When you think about a sub sandwich, you think about a long roll stuffed to the gills with meat, cheese and condiments that is reminiscent of a submarine. But what about those sandwiches that aren’t necessarily long, but are stacked super high with ingredients? I think we should try and call these sandwiches skyscrapers, which is what you’re getting with this week’s feature.

While you’re able to customize this sandwich however you’d like, the base consists of mortadella, salami, coppa, provolone, and Italian dressing served on a ciabatta roll. But what’s a sandwich without lettuce, pickles, pepperoncinis, tomatoes and condiments? Once all those are added you’re left with something that can barely fit in your mouth. But if you are able to unhinge your jaw, you’re met with glorious bite after glorious bite.

The meat trio is the Three Tenors of Italian meats balancing savory, salty, richness, and slightly sweet, perfectly. With all that going on you need something to cut through, and the Italian dressing does exactly that with its tangy herb-y-ness. The pickles and pepperoncinis provide additional tanginess, but also a crunchy texture along with the lettuce while the big bright tomato kicks down the door in the freshness department.

This is the perfect accompaniment to sandwich season – that time of year when trails open up and you can grab and go, eating one half before you start and the other when you summit. Or, in my case, both halves before.
