EAT This Week: Squeeze In’s Throwdown Omelettes
To try and decide each week where and what to eat in and around the basin can be a challenge – there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.
If you were one to watch “Bobby Flay’s Throwdown” back in the day, then there’s a chance you could have seen the competition between this week’s features – yes, features. You get not one, but two options this week – each bringing a tasty uniqueness that make for a tough choice when it comes to ordering breakfast at the Squeeze In.
The Racy Tracy
Named after a former employee, this take on a classic California omelette is the top seller at the restaurant (well, next to coffee, of course). Sautéed mushrooms, premium bacon and jack cheese are tucked into a pillow-y soft blanket of eggs before topped with fresh slices of avocado and served with a recommended mushroom sauce. I say recommended because you do have a choice of three (or can request multiple), but there’s a reason this is a best seller, so don’t overthink it.

It’s served with a side of sourdough toast and option of spuds or fresh fruit. If you really want to amp up the spuds, get them “Otis” style (named after the former owner), which sees them tossed in melted cheese and green onions. Mix those with one of the sauces and you’re really asking to be punched in the mouth with flavor jab after flavor jab.
For the omelette, it’s buttery, earthy and rich, but surprisingly light. The thick cut smoked bacon adds a meaty smokiness that helps balance out the flavors, but the whole kit and caboodle bite has to include that mushroom sauce. It’s super silky and packs just the right amount of pop to compliment all the other ingredients.
The Spanish Flay
While not quite the exact version that Bobby Flay took into battle, this representation of that omelette is no less delicious. Diced red bell peppers, potatoes, and chorizo are sautéed in butter and smoked paprika before covered in melted jack cheese then enveloped in a four egg omelette garnished with fresh parsley and traditionally served with tomato pesto sauce alongside the same side offerings listed above.

This omelette hits you with the SSS trifecta of flavors: sweet, savory and smoky, and there’s plenty of great textures with the potatoes and crisp-tender peppers. But, much like the Racy Tracy, it’s the sauce that really sends this option into orbit. If I could lie down and have a bulldozer push as much of this into my mouth as possible, I wouldn’t complain.
Yes, it’s a Sophie’s choice when it comes to picking which one, and yes, there was a winner. But I’m not going to spoil the ending here. Go in and try both and decide for yourself – or I guess find the old episode and stream it. But if you do find it, it’s only going to make you hungry so you might as well just beat the craving.
