Lake Tahoe recipe: Mix it up with an antioxidant smoothie bowl

Smoothies are a favorite meal on the go because they are an easy way to get your vitamins and nutrients all in one cup.
I’ve been seeing beautiful images of smoothie bowls recently, and it seems like a great way to enjoy a smoothie when you have more time.
I use a Vitamix for blending, which makes all the difference in the world. It truly pulverizes the raw beet and spinach into a wonderful smooth texture.
If you have a simpler blender, just chop the beet into small pieces and it should work just fine.
ANTIOXIDANT SMOOTHIE BOWL
Makes two servings
Smoothie ingredients:
1/2 cup Greek yogurt
1/2 cup coconut water
1/2 cup pomegranate juice
2 cups packed spinach
1 cup frozen red cherries
1/2 cup frozen blueberries
1 red beet, peeled and chopped (about 1 cup)
1 tablespoon flax seed meal
Toppings:
Chia seeds
Almonds
Sliced banana
Unsweetened flaked coconut
Additional topping ideas:
Unsalted sunflower seeds
Granola
Fresh berries
Hemp seeds
Directions:
Add all smoothie ingredients to a blender and blend until creamy and smooth. Taste and adjust flavor or add more liquid to thin if needed. Pour smoothie into two bowls and sprinkle on your desired toppings.
